This is what Northern French whites are all about. Huge intensity, and creaminess. A Chablis of the old school.
Producer introduction
Alice and Olivier de Moor met while on an internship at the House of Brocard, soon after this the two young oenologists started their own 6 hectare domaine in Courgis, Chablis. They own no Premier Cru or Grand Cru sites, but their wines have more flavour and texture than many of these wines. This is in part due to their organic vineyard management and also their super low yields. In the Bel Air and Rosette parcels the yield is 30% below the norm. Winemaking is unashamedly natural, in such a mechanised region they are a beacon of the boutique: no added yeast and judicious use of 1 to 4 year old barriques ensure maximum personality, there is no fining or filtration here and little need for sulphur, the vigour of the wine resonates from the glass.

Tasting Notes
The De Moors create truly exquisite wine, sticking firmly to traditional methods and daring to farm organically in a notoriously tricky region, their gamble really pays off. The Chablis really is no exception. Made in the way Chablis would have been until commercial pressures changed the region in the seventies, it;s natural minerality and butteriness is a real joy. So far from removed from the generic Chablis so often found.
