This stunningly simple operation is based in the pretty suburbs of this small town in the middle of a sea of vines. Some mornings, the town is literally an island in a low mist that covers the countryside. Incredibly low tech, the vines are all tended by hand and irrigation (an increasingly big problem round here) is only used on newly planted vines. Yeasts are all indigenous and the wines are made in massive concrete jars with wonderful stable thermodynamics (like a teapot as opposed to an energy hungry kettle). The white Airén is exceptional, an extraordinary fresh, rich wine that’s a joy to drink and a complete bargain. The texture is wonderful and lasts for ages in the mouth. Yemanueva, or new yolk, is a remarkable apt and traditional nickname for these mouthcoating properties!
