Fabienne Capello's marvellous estate on the shores of Lake Thau is a genuinely remarkable place. She runs everything with ecology and bio diversity in mind, resulting in wine with a marvellous vivacity. Using staunchly traditional methods means that everything she produces has a true authenticity to it, wine that really remains true to the soil it was grown on.  Although not organically certified she uses exclusively organic methods being a firm beleiver in the long term benefits of such practices, however feeling that certification doesn't represent value for such a small artisinal grower.
