Chablis "Rosette", Alice et Olivier De Moor

The Rosette is the most flavoursome and complex wine of all. With a little cellaring the wine has become much more approachable, friendly in fact! A grand wine like this deserves a grand feast: perhaps a whole Dover sole.

Producer introduction
Alice and Olivier de Moor met while on an internship at the House of Brocard, soon after this the two young oenologists started their own 6 hectare domaine in Courgis, Chablis. They own no Premier Cru or Grand Cru sites, but their wines have more flavour and texture than many of these wines. This is in part due to their organic vineyard management and also their super low yields. In the Bel Air and Rosette parcels the yield is 30% below the norm. Winemaking is unashamedly natural, in such a mechanised region they are a beacon of the boutique: no added yeast and judicious use of 1 to 4 year old barriques ensure maximum personality, there is no fining or filtration here and little need for sulphur, the vigour of the wine resonates from the glass.

Tasting Notes
Most growers around Chablis are very risk averse. There is relatively high rainfall combined with other natural pitfalls and the cash value of the crop is very high. It takes a very strong and non-capricious will to farm traditionally and naturally without modern chemical safety nets. Sadly, by en large, the area is sinking into branded complacency as a result. It was therefore with enormous joy that I tasted my first wine in the ancient and icy cellars of the De Moors. This is what these northern wines should taste like: massively intense, creamy and yet minerally and most of all, burstingly fresh, even after 10 years. The Rosette is the most flavoursome and complex wine of all. With a little cellaring the wine has become much more approachable, friendly in fact! A grand wine like this deserves a grand feast: perhaps a whole Dover sole. Their wines are made as Chablis would have been made up until the 1970s, hand picked, with indigenous yeasts, tiny quantities of sulphur and nothing else. No added yeasts, acids or enzymes to make the wines conform.
