Producer introduction
Below is an introduction to Will Davenport and then some paragraphs about his operation and the two vineyard sites. At the bottom are some nice words from the press! Obviously, its not all Will: there's his army of monkeys which assist in the organic wine-making process!
Tasting Notes
Made from classic Vitis vinifera varieties (Pinot Noir and Auxerois (Alsace)), this is quite an unusual offering from the UK. Two years (minimum) bottle age has lead to an intense nose of apple and biscuit.The palate is just as vibrant, great acidity is pitched against green fruit salad and yeasty flavours that are truely smile inducing :)If that wasn't enough, some Biodynamic practices (see concepts) were employed in the management of this vineyard. This extends to the winery, where natural fermentations and zero fining rule the roost!
